Baked Olive-and-'Chokes Chicken
An easy weeknight dinner all in one pan! Gluten-free, dairy-free and perfect for those following an anti-inflammatory way of eating like Autoimmune Protocol or Inflammatory Keto!
Preheat oven to 425 degrees F.
Cut squash in large chunks and place at the bottom of a 9x13 baking dish, skin side facing down.
Spread artichoke hummus over veggies, add add black olives and red onions.
Spread artichoke hummus over tops of chicken.,
Cook for 35-45 min until chicken and veggies are cooked through. (Note: If you opt to cook closer to 6 squash than just 3, you will have a bit of a gathering of liquids at the bottom of your pan. You can simply pour it off.)
Consider subbing riced cauliflower or broccoli for the squash! (Be generous with the artichoke hummus!)
