Christmas Morning Bacon Quiche (AI Keto, Paleo, Whole30)
Great any time of the year, this crustless quiche can be made up the night before and thrown in the oven the next morning! Christmas Morning Bacon Quiche is grain-free, dairy-free, Paleo, Whole30 and AI Keto-friendly!

Paleo Keto Christmas Morning Bacon Quiche
Instructions
  1. Preheat oven to 355º F. In a large skillet on medium heat, sauté mushrooms, onions and bacon with 2 tsp of coconut oil. (You can opt to prepare the bacon in the microwave first to save a little time.)
  2. Meanwhile, whisk eggs, milk and sea salt.
  3. Once skillet veggies and bacon begin to brown, mix in your greens while continuing to sauté. Continue until greens cook down. Be sure to stir often to avoid burning on the bottom of the skillet.
  4. Add skillet contents to eggs and milk mixture. Stir to combine.
  5. Place 1/2-1 tsp coconut oil in pie dish and set in oven for 1 minute. Remove dish from oven and spread oil all over top of dish.
  6. Pour mixture into pie plate. Cook for 35 min or until center is set.
Recipe Notes

Use a fork tip inserted in the center of the quiche to check doneness.  If the fork comes out clean, you're ready to eat!

Bacon-lover? Go ahead and use the entire package instead of just a half like this recipe calls for.  OR, consider doubling the recipe in a 9X13 pan or two pie dishes to have extra food on hand!

I love breakfast any day, any time; however, I especially love breakfast on Christmas morning!  Looking for something to feed your crew this year? This Christmas Morning Bacon Quiche is the answer!  Best part? It fits in with your anti-inflammatory way of eating and is perfect for those following an AI Keto, Paleo or Whole30 template.  (AIP friends that have reintroduced eggs will love this, too!  OR, you can simply just eat the yummy skillet part…I do!)

It’s So EASY to Make!

Ya just need a skillet and a mixture or a bowl and spoon.  Deciding to break out those adorable holiday baking dishes hidden somewhere in the basement is totally up to you!

Combine all veggies and bacon in skillet. Meanwhile, mix up your eggs and coconut milk.

Grease your dish with coconut oil. (Or another anti-inflammatory fat of your choice like tallow. You can use ghee or grass-fed butter if you’re not sensitive to dairy.) Remember canola oil is a forever no-no. Olive oil technically could be used here since you’re under 375 degrees…but I wouldn’t chance it. Coconut oil is so much more stable at high heats! Olive oil is will oxidize quicker=inflammation. Keep your olive oil for cold foods like salad dressings!

Pour mixture in dish! You’re ready for your preheated oven set to 355º F! OR, you can cover it and set it in the fridge to make in the morning! WIN!

After 35 minutes, your quiche should be ready for serving! I added a few basil leaves for kicks and giggles. Consider something ultra simple like these frozen berry medley salad topped with fresh mint and frozen coconut shreds! A dash of cinnamon is also uber yummy!
