Great any time of the year, this crustless quiche can be made up the night before and thrown in the oven the next morning! Christmas Morning Bacon Quiche is grain-free, dairy-free, Paleo, Whole30 and AI Keto-friendly!
Preheat oven to 355º F. In a large skillet on medium heat, sauté mushrooms, onions and bacon with 2 tsp of coconut oil. (You can opt to prepare the bacon in the microwave first to save a little time.)
Meanwhile, whisk eggs, milk and sea salt.
Once skillet veggies and bacon begin to brown, mix in your greens while continuing to sauté. Continue until greens cook down. Be sure to stir often to avoid burning on the bottom of the skillet.
Add skillet contents to eggs and milk mixture. Stir to combine.
Place 1/2-1 tsp coconut oil in pie dish and set in oven for 1 minute. Remove dish from oven and spread oil all over top of dish.
Pour mixture into pie plate. Cook for 35 min or until center is set.
Use a fork tip inserted in the center of the quiche to check doneness. If the fork comes out clean, you're ready to eat!
Bacon-lover? Go ahead and use the entire package instead of just a half like this recipe calls for. OR, consider doubling the recipe in a 9X13 pan or two pie dishes to have extra food on hand!
