What is it about a meatball that is so fulfilling?  These Flavor Bursting Garlic Meatballs (AIP Paleo, AI Keto) can please a crowd or just the fam.  We love to add them to the top of our baked spaghetti squash with a little extra Artichoke Hummus for sauce for a hearty meal.   They’re an appetizer any carnivore will appreciate.  No one will ever suspect that there’s hidden veggies lurking inside.

I grabbed a jar of Artichoke Hummus from my freezer along with some ground beef to make these Flavor Bursting Garlic Meatballs (AIP Paleo, AI Keto)

If you’ve made the Artichoke Hummus and have a little extra stashed in your freezer like me, simply thaw it in the fridge overnight or submerge your container in a bowl of really hot water until the hummus is defrosted.  I use my empty Trader Joe’s applesauce jars to store items in the freezer.  Beware, they can break if you shift the temperature too quickly!  I’ve used the microwave to defrost items successfully, but slow and steady wins the race…and saves you from a broken jar!

Mix all your ingredients; form balls.  Stick in oven.  Set under broiler to finish ’em off!  Look at that lovely color!

Don’t forget to broil these babies!  Watch them so they don’t burn!  It might take 2-4 min. depending on your oven.

Instructions
  1. Preheat oven to 365ºF.
  2. In a large bowl, mix wet and dry ingredients with ground beef.
  3. Using about a tablespoon's worth of meat mixture, form into meatballs and place on parchment-lined cookie sheets.
  4. Bake for 20-25 min.
  5. Set under broiler for 2-4 minutes or until tops are brown.
Recipe Notes

(While baking, if your pan seems to be full of juice from the pureed veggies in the Artichoke Hummus, simply tilt cookie sheet and drain excess liquid.)
