Flavor Bursting Garlic Meatballs (AIP Paleo, AI Keto, Whole 30)
Great on top of spaghetti squash with an extra helping of Artichoke Hummus for sauce, or simply as an appetizer while watching the big game! Nightshade and dairy free!
  1. Preheat oven to 365ºF.
  2. In a large bowl, mix wet and dry ingredients with ground beef.
  3. Using about a tablespoon’s worth of meat mixture, form into meatballs and place on parchment-lined cookie sheets.
  4. Bake for 20-25 min.
  5. Set under broiler for 2-4 minutes or until tops are brown.

(While baking, if your pan seems to be full of juice from the pureed veggies in the Artichoke Hummus, simply tilt cookie sheet and drain excess liquid.)
