If I were to rewrite the food pyramid (trust me, there’s so many reasons why that SHOULD be done), then I firmly believe a large section should be committed to guacamole and guacamole alone. Okay, okay. But, I’m only have joking. This Lime-Lovin’ Guacamole is finger-lickin’ good and perfect for accompanying Tex-Mex dinners, dressing salads and licking every last drop from your fingers. Plus, it’s a good for you! Healthy fats are an essential part of our diets. Avocados pack a mean punch!
Avocados: Why You Should Eat Them
Let me reacquaint you with my favorite fruit and all many of the reasons why I adore it so:
- Has more potassium than a banana
- Contains fiber to aid in digestion
- Helps your body absorb nutrients
Okay, those I already knew, but today I learned this: avocados are anti-aging! As in, they can boost collagen production. Translation: They keep those wrinkles away, baby! Winning! And, I also learned that it’s helpful for recovering from inflammation! Score!
Because avocados are a low pesticide food, you don’t have to worry about purchasing organic. Save those pennies for organic greens and such.
Avocados for Breakfast, Lunch, Dinner and Snacks
In the morning
While guacamole is highest on my ways-to-eat-an-avocado list, there are other ways to consume this gem. I like adding 1/4-1/2 to a morning smoothie now and then; check it out! If you like ’em in your smoothies, consider stocking up next time there’s an avocado sale and FREEZE them! Yes, indeed. You’ll want to make sure they’re nice-n-ripe, cut them in half (discard skin and pit, of course), and place inside a container in a single layer. If you just throw them all in a ziplock bag, they’re going to stick together, and you’re going to have to pry the frozen chunks apart.
During the day
Add them sliced on top of a salad. (It’ll help ya absorb those nutrients from your veggies!) Looking for a different avocado dip besides gauc? Try my Simple Salmon Avocado Dip! Of course it’s a no-brainer to pair with yummy Mexican-food dishes. I make sure my lil’ guy gets his fill of healthy fats by adding them to his frozen treats. You can even make a yummy pudding with avocados!
On the road/in the air
Avocados are great for on-the-go foods. I’ve been known to carry one in my purse in case there’s nothing else to eat. 🙂 I’d suggest taking a baggie, too. And if you aren’t an avocado-barbarian like myself consider a spoon. This is a snack you can pack in your purse and TSA won’t take it. Then, when you need to grab a quick airport salad, you’ll have a great alternative to the sugar-n-soy-laden dressings. Ick.
All in all, avocados can’t be beat!
