Paleo Cinnamon Granola
Sprinkle on coconut yogurt or make as a fun snack for your co-workers during the holidays!
In a large bowl, mix 1/2 of the bag of coconut flakes with melted coconut oil and all other ingredients.
Grease cookie sheet with palm shortening. (Or, you can use additional coconut oil or parchment paper.)
Pour nut and coconut flake mixture over cookie sheet. Cook for 7 min.
Remove cookie sheet from oven. Use a spatula to stir toasted flakes and nuts. Add the remained coconut flakes to the cookie sheet.
Return cookie sheet to oven for additional 5-10 min. (You'll want your new flakes to get slightly brown, but you don't want to burn anything else!)
Let cool and store in an air-tight container.
This is great on top of coconut milk yogurt. It's super-cute in a Mason jar as a holiday gift for co-workers. Add some melted chocolate/carob chips to make almond bark.
