Southwest Eggroll in a Bowl (AIP/Paleo/Keto)

  1. In a large skillet, brown ground beef with sea salt.
  2. Meanwhile, chop mushrooms and red onions. Add to browning meat.
  3. Once mushrooms are brown, add garlic and ginger powder. Stir. Add shredded cabbage and 4 tablespoons coconut aminos. Let veggies cook down until translucent. (Note: the cabbage will cook down.)
  4. Meanwhile, cut green onions, cilantro and avocado for topping.
  5. Add lime juice and one tablespoon coconut aminos to skillet before serving. Top with green onions, cilantro and avocado as desired.
